Yamaguchi: Tile Soba

Delicious buckwheat noodles or 'Kawara Soba' served on a tile is a specialty of the Shimonoseki area in this prefecture. Fragrant green tea noodles are used, along with pork, eggs, and green onions and other vegetables.
